  • Calvisius Venise caviar is a Siberian caviar which takes 7 years for the sturgeon to reach maturity and is raised in fresh Italian spring water. The upwelling of this water is in the village of Calvisano, within the property of the caviar farm so there is no possibility of contamination – it is completely pure. Raised in this environment the fish remain perfectly healthy and are able to reach a prime state for caviar production.

    Calvisius Venise is a medium-grained caviar and the dusky color can range widely with an array of different hues. The texture is quite smooth and delicate and is embodied by a high degree of moisture. Calvisius Venise has a full, well-rounded mineral flavor that lingers on the palate with hints of dried fruit and floral tones. This caviar is Malassol (around 3% salt), so the natural characteristics of the roe can be appreciated in full.

    Calvisius Venise is best served simply and elegantly with toast points, a dollop of crème fraîche and a glass of dry champagne.
