  • Calvisius Tradition is made 100% from the caviar of White Sturgeon, a species which has been raised in Italy for over 30 years. It takes over 12 years for the sturgeon to mature and be ready for these precious black pearls to be harvested. The utmost care is taken throughout each step of the process and the resulting product is outstanding.

    Calvisius Tradition has been described as one of the world’s most elegant caviar as it hosts an array of unique characteristics which are considered the benchmark in its class. The ebony colored eggs are large-grained and perfectly round with an exquisite pop when eaten. The flavor is slightly nutty with a light fruity taste, smooth and rich yet clean; a result of the purest spring water within which the sturgeon are raised. The delicacy of this product can be appreciated in full due to its low salt content (a true Malassol).

    Serve with blinis accompanied with either vodka or extra-dry champagne.
